LID Round 2, Day 6

Its day 6 and things are going fine. I’m so much better prepared for LID this time. Thank goodness.

The Baked Veggie Egg White Cups I made on Saturday sure came in handy for a quick breakfast before taking the kids to school. They reheat well in the microwave.

Veggie Egg White Cups

I’m so grateful that pasta is allowed on LID. I have been making pasta with zucchini and tomatoes for as long as I can remember. It’s nice to have familiar dishes while on LID.

Rotini with Zucchini and Tomatoes

What I ate today:
Breakfast: Coffee with non-dairy creamer and Baked Veggie Egg White Cups
Lunch:  Leftover Beef Stew
Dinner: Rotini with Zucchini and Tomatoes and mixed greens and grape tomatoes with Balsamic Vinaigrette
