LID Round 2, Day 4

It’s Saturday. Spent the morning and early afternoon at opening day of my son’s Little League. He’s playing T-Ball this year. His team is named The Turtles. Need I say more? It’s going to be a long season.

Spent the rest of the day cooking and cleaning. I made some Baked Veggie Egg White Cups, Zucchini Bread, and Beef Stew. Overall, it was a good day.

These Baked Veggie Egg White Cups are great for a quick breakfast. You can change them up by adding different veggies.

I froze some sliced Zucchini Bread to have for quick breakfasts next week.

Zucchini Bread 2 (LID)

Beef Stew (especially when paired with homemade Beer Bread) is comfort food. Comfort is a necessity when going through tough times with Thyroid Cancer and LID.

What I ate today:
Breakfast: Coffee with non-dairy creamer, Baked Veggie Egg White Cups, and hashbrowns
Lunch:  Simple salad (mixed greens, grape tomatoes, and cucumber) with Balsamic Vinaigrette
Dinner: Beef Stew and Beer Bread
Snack: Zucchini Bread
