Baked Veggie Egg White Cups (LID)

This recipe is great for a LID-friendly breakfast. These Veggie Egg White Cups were delicious with a few shakes of Texas Pete Hot Sauce and some hashbrowns.

I pretty much followed her recipe, except that I added chopped cremini mushrooms to the mix, used green bell peppers instead of yellow, and reduced the amount made to 6.
