LID Day 9: Ratatouille

One of my favorite breakfast meals is scrambled eggs and hashbrowns. I was so happy when I read the ingredients list of Publix brand hashbrowns  and realized I could eat them on my low iodine diet. It’s the little things.

What I ate today:
Breakfast: Scrambled egg whites and hashbrowns and coffee with non-dairy creamer
Lunch: Leftover Cavatappi with Rapini
Dinner: Ratatouille
