Lemon-Garlic Salad Dressing

I could live on this stuff. It is so good. My husband hates any type of commercial salad dressing, but loves this one. It goes good on any kind of salad: tossed, Greek, lentil, kale, rice, spinach, etc… It is also great as a dip for steamed artichokes.

1/4 cup fresh lemon juice
1/4 cup extra virgin olive oil
1 clove garlic, minced
non-iodized salt (I use Morton’s Coarse Kosher Salt) and pepper to taste

Combine all the ingredients in a Mason jar. Screw on the top and shake to combine.
