LID Day 2: Sopa Ranchera, Chicken and Noodles, and Beer Bread

Day 2 of LID. It was Saturday, so I was able to spend more time in the kitchen. I’m trying to take some of my favorite recipes and adjust them by using LID-allowed ingredient. So far, so good.

What I Ate Today:
Breakfast: Coffee with non-dairy creamer
Lunch: Sopa Ranchera
Dinner: Chicken and Noodles and Beer Bread

Products I Used Today:
Publix brand non-dairy coffee creamer (most other brands contained salt)
Rapunzel Vegan No Salt Added Vegetable Bouillon (I found this at Earth Fare)
Shiner Bock beer
Egg Beaters 100% Egg Whites
Hunt’s No Salt Added Diced Tomatoes
